The one in your video is exactly what mine looked like before burn in. It is covered in oil. BUT the reason it looks galvanized in my opinion is because it has some type of "high temp" paint that flakes off when you do your burn in and over time. It must be of decent quality because that entire part got completely soaked in brake cleaner by me before I installed mine. A lot of people may not know this but Brake cleaner is an outstanding dirt, oil and grease remover. It leaves zero residue after drying. However it will destroy most plastics and paint and the what ever Weber sprayed on it was not affected in anyway by the brake cleaner. After it all burns off its fairy black like the other pictures. Mine has a little surface rust on the sides now too. In my opinion this will be a wear and tear part and probably have to be replaced every once in awhile due to rust through and the heat over time.Update 1st of March: when reading a review on amazingribs.com (link) I got triggered and re-watching the movie I noticed a difference. The pictures that I saw until now show the deflector with a coating in the movie by Happy BBQ it looks galvaniced. check @ 11:45. The picture attached is the one from amazingribs.com.
