Searwood XL 600
Hello, I’m new to the group and I have a question regarding the burn in of my new Searwood XL 600. After the initial burn in of 30 minutes at 450 went off without any issues, I noticed that there was a lot of ash on the lid and grates. Is this normal or do I have an issue with my grill?
 
Normal, especially on the burn off.
 
I just completed my Searwood 600 burn in. It didn't seem too ashy. It was similar to the amount of ash my Smokefire creates at higher temperatures. With the Smokefire I would sometimes end up with some ash on the meat as the fan really stirs up the ash. Once you get a build up of smoke on the shiny surfaces, you will probably not notice it as much.
 
How are you liking the Searwood XL 600?
 
My 600 was delivered yesterday. It took about 10 m oh bites before before it went above 100 to 450 for burn in. I thought it was broke. But kicked in. . Yes the burn in made lots of ash and was flying all over the smoker . Thought it was material that ACE did putting it together or dust. Did the shutdown after 35 min wiped off the flavor user and grill with a damp cloth. Fired it up ribs at 275 for about 3 hours 15 min using a YouTube video and 450 for a filet mignon at the end. Both were delicious . I need to smoke the ribs maybe an extra half hour to get them softer but they were amazing . The app is awesome . My first smoker and smoke. Sams club ribs are meaty loved it .
 
I also notice during cooking it would from 275 to 235 a few times. It was weird . But then I would set to 285 from the app to see if it would heat up faster. It did go back to 275 but why would the temp drop?
 
Just did my initial burn this morning and cleaned it with a damp cloth too. Headed to the supermarket to get some burgers - and took the London broil out of the freezer for tomorrow's treat.

Lots of reasons; opening the lid, high winds, wet pellets, poor quality pellets, etc...if none of these are the issue, then check if the ambient temp sensor got really dirty after burn off
 
How do you clean that sensor then? It’s the one inside the grill correct?

Yes. I'd try the least aggressive way first, just wipe it off with a wet paper towel, or use a non-metal scouring pad if it's dirty. I've also used emery cloth too, but since yours is pretty new, it shouldn't need that.

I’ve only got one cook on it so far, but it is working great. I did a reverse sear on a boneless ribeye and it turned out really, really well. Perfect medium rare!

Excellent! Aside from making burgers, so far I smoked a pork loin (best I have ever made) and some London Broil.

The London Broil came out to be the most tender I have ever had. Smoked it at 250 degrees and got the the internal temp of the meat to 125, then wrapped it in foil and put it into a small cooler for three hours. It was incredible.
