I have a Weber Genesis gas grill with a rotisserie. Yesterday I roasted a 4.5 lb. chicken over a tray with water at 350 F. I used a Thermopro digital thermometer for measuring the temperature of the grill and the bird (thickest part of the breast). I estimated the cooking time at one hour based on 13 minutes per lb. At one hour the breast temperature was only 145 F. It took another 20 minutes after raising the grill temperature to 380 F to bring the breast to 165 F. Can anyone explain why it took so much longer? Was it the water bath? Thank you for your help. One other thing. I did inject the breast with a liquid solution--about 3/4 cup. Might this be the reason for a longer cooking time?
