EX6, 3, 22” kettles, 18” kettle and a e310 gasser
So I’ve done a couple big smokes on my EX6 last week, Thanksgiving. I cooked my Turkey at what the controller said was 300, but it took like 6 hours. Last two were at 350 according to controller. Didn’t use an ambient probe, but that seems like a very long time. I’ll have to try using an ambient probe next time. Any way cheers.
 
When you run your test just remember that the built in probe runs off a PID where the ambient probe doesn't.
 
Had my last couple butts take WAY to long, love my SmokeFire but I need to use my thermoworks Smoke to keep it honest these days.
I have had some wild temp differences.
 
It has been pretty cold here….I did a brisket for thanksgiving and it took just over 20 hours, not counting the three hour rest before slicing. Ran it at what the temp gauge said was 225 on the SmokeFire. I switched it to the oven at 350 for about an hour and a half at the end. My probe read around 207-210 when I pulled it out and wrapped in towels into the cooler for 3 hours. Total cooked time 21.5 hours. 3 hours resting. Best tasting brisket I’ve ever done.

I haven’t had that experience, but I obviously agree that there is something off unless the turkey was 40# and frozen. 😜
