Hi all,

Doing my 3rd brisket on my 2nd generation 6EX. Started it last night, checked it at midnight, and this morning around 7am I wrapped the most beautiful brisket with tons of bark (internal temp was 160°). So I'm thinking this will be the best one yet... imagine my surprise when I check again around 9am and the darn thing is shut down and my probe is reading 140!

I have no idea what happened but it was pretty much locked up and I had to cycle the power switch and then set the target temp again. It took a while to get rolling and now it seems to be back to normal but man this has got me on edge... came close to ruining this cook I think.

I saw there is another thread mentioning one that went into shut down mode but I wasn't out here to hear if that's what happened.

This is another reason to run an air probe. You will see a decrease sooner on it than you will on the internal probe. Several units have alarms for temp drops. My Mavirick does.

Thanks Honeyman, that's a good point.

Well I'm happy to report this was really the best brisket I've ever cooked... and I came very close to ruining it a second time :/

So I was monitoring the temp after the restart, and my wife asked me what time it would be ready. I remembered my last cook when I noticed the temp was way off so I thought I wouldn't trust the weber probe this time and I would start checking myself.

The app said Probe 1 was at 185° so I opened the lid and poked my thermoworks probe and got 204 to 205 depending on where I poked!! I immediately initiated shutdown and got my cooler opened so I could rest the brisket.

I am happy to report it was perfect! The only bad thing was the smoke flavor didn't taste that good because all I had was apple... and that is not recommended for beef, but it was still pretty good and the texture and doneness was prefect.

I will definitely be running my Smoke probe on my next cook, and going to do more testing on these weber probes to see what the deal is.

Mine has been doing that sometimes when set to 200. I've been in discussions with weber on causes. The hopper will fill but no fire after awhile. One thing to check when restarting is that there are no pellets down in the ash drawer. They can ignite and cause a major fire mine melted the tray. It works fine on high Temps and also on smoke boost. I'll keep everyone informed on the outcome. They are sending me a new drawer and tray.
