Temp fluctuation

EX6, 3, 22” kettles, 18” kettle and a e310 gasser
So I’m doing a couple 3 pans of jerky…set my sf for 200. It’s fluctuating between 300 and 200 back n forth. Not sure why. Just did a long low n slow brisket a couple weeks ago and it held 225, with no fluctuating at all.
 
Sucks because half of my jerky got too well done an had to be thrown away.

I'm in the middle of smoking a pork butt - temp set at 230 and fluctuating between 209 and 240 according to my thermaworks
