I already had three meat probes and two ambient probes for my pre-Weber iGrill2 and my SmokeFire EX6 came with two more meat probes (they're the same and compatible) so I just placed the ambient probes in different locations and running the grill at different temperatures. It confirmed that the fixed temp probe that came with the grill was accurate and gave me a good idea of where the hot spots are. Predictably, the right side of the grill consistently runs 5-10 degrees warmer because that's the direction the fan blows, but if I fill the top rack (it will hold two briskets) and place three foil pans below on the lower rack the heat seems to be better distributed.
