Easter weekend was also Wrestlemania weekend. I've been planning a cook for this weekend for over a year.
I did a 17.8 lb beef brisket over 20 hours and two racks of pork spare ribs. Everyone loved both. Had so much damned brisket Saturday and Sunday that I'm kinda sick of brisket for a while.
Just spent yesterday scrubbing and cleaning the grill, inside and out. Crazy how much ash and grease was in there stuck to the walls. And all over the chromed grills.
