Searwood XL 600, Genesis II E-410, griddle insert for the Genesis, 22" Kettle
Chuck from MN here. Purchased my Searwood XL a few weeks back from my local Ace Hardware. Since doing the burn off and smoking some boneless chops, work has unfortunately gotten in the way of my outdoor cooking. But today, I was determined to try this 0-400 method for wings I see everyone talking about.

After the first 3 or 4 minutes of smoke, I put the flats & drummies on for 30 min, then flipped & did another 30 min. I forgot to check temps until the end & IT was a bit too high at about 205. As a result, the flats were just a tad dry, literally just a tad, but the drummies were great. Skin was nice and crispy. Next time, I think I'll go 25 min., flip, check temps, then check again at 15 min.

Used a butt rub (don't recall which) & sauced them with Sweet Baby Ray's when my wife & I dug in.

Anyway, I've been smokin'/grillin' for years on a few vertical Masterbuilt LP & stick burner combos, my Weber 22" kettle, an old Dynaglo & Genesis 410. I wanted some simplicity and less watching the cooker all day. The Searwood seems to be the ticket!
