Found a smaller size packer,8.75lb, at the butcher shop. Just fits on the top rack of my Searwood 600. First time trimming out a whole brisket, so a lot of firsts here. Smoked a pretrimmed flat from the grocery store a few years back, but this seemed like a much better cut and quality. Just 3 hours in and looking nice.
