Hi, total noob with smoking. What is the lowest temp I can do on the Searwood with the smoke setting? I want to smoke some salmon to be more like cold smoked than hot/cooked salmon.

You could buy a smoke tube, fill it with pellets, light it for a true cold smoke, then after a while turn the Searwood on to get to your desired doneness on the salmon

I just ordered a set of two smoke tubes. I have a small torch for use in the kitchen, I think it will make enough flame to get the tubes going.

Couple batches salmon and tuna I did @180 til reaching temp came out great! I’ve done multiple batches with no complaints.

The salmon I have cooked at both 180 and 225 has turned out great. Something to try is this. I have read that if you want to cold smoke cheese, the best way is to put it on a rack laying across a pan full of ice. This way, most of the heat will get absorbed by the ice leaving the cheese to absorb the smoke. I can't imagine that this wouldn't work on salmon too.
