Did my 1st ever pork belly and it turned out to be amazing. Did 1 hour at 180 to get a good smoke ring and then did 5 hours at 225. Was so good
The Searwood was so easy to cook with and it was nice not having to hover over my cooker to make sure my temps didn’t get out of control.


Doing St Louis ribs tomorrow.

Did ribs today and they were so good. I did 2 hours at 180 for super smoke. And the. 3 hours as 250 the 2 hours at 250 wrapped and then 20 minutes mopped with sauce. Pulled off to rest for 30 minutes
