My juice method

I just wanted to ask if anyone else uses like my method to get a somewhat juicy meat. Which is what I call the subtraction method. Take how ever many many minutes you put the meat if on the high end subtract by half the time spent to put on the other side. If the lower usually reduce to a minute less.
 
I’m not sure I understand what method that is…I’m confused. Does this mean 1/2 of the meat is undercooked, what meat are we talking about…is this with pellet or charcoal…possibly gas….?
