Weber temp probes not accurate?

Been smoking a Chuck beef shoulder all day waiting for temp to get to 160. Prob tells me 149 and I now doubled check with my Alpha Grillers prob. Probe shows range of meet internal temp from 153-167, depending on thickness area.
Any suggestion for a more accurate wired probe?
