How the tallow workout?
All I can say is the beef plate ribs were delicious. That’s my first effort using the tallow. You can smell the ultra beefy flavor. I’d do it again for sure.

Friday: Roasted Hatch chiles and a few tomatoes for Texas Tortilla Soup. Used chicken stock made from a smoked chicken carcass.
Saturday: Smoked salmon with 3 different rubs.

Looks like a great meal here, and someone stole some of my fine China too…lol.
I have a couple different patterns of that fine china. 😜
