Finished an overnight cook for a brisket. cooked on top rack with water pan. 225 degrees Started at 9:30 PM. at 6:30 AM water in pan had never boiled so kicked it up to 330. Water still never boiled so went to 235 and water started boiling, so I believe thermostat must be off 20 degrees. I then set it for 245 for the rest of the cook. Took 18 hours to reach 205 and foil wrapped it then into a cooler for 2 hours

I trimmed the brisket of nearly all the fat then rubbed it liberally with Joes KC RUB then put the trimmings on top of the meat. Brisket was juicy and tender. Melt in your mouth
 
Pictures please. Sounds good, but I have to see it to believe it. Remember, the camera always eats first. 😂
