Did some Poor Man's Burnt Ends today, they were a hit! Here's a shot before they were gone!

Used Meat Church The Gospel. Smoke boost, then 250 to 170 IT, braised until 200 IT. Rest until ~180, cut/cubed then used a local butcher shop rub & 2:1 Kinder's BBQ sauce & local honey from one of my neighbors.

My bride loved these and our friends too!

Very nice.
I have been really liking the gospel lately, seems to have all the notes I’m looking for in a BBQ rub.
I’m looking to get my hands on just a brisket point and doing some burnt end soon.
