Well, the good news is when I called Weber and spoke to woman in the pellet division, they are working on a solution for the inability to reach high temp. No answers yet, but this known issue is not being ignored. They fully understand how this is killing their reputation. I ran another test yesterday after a 3 hour trout smoke, using my K-type brand new pit probe I bought from Thermoworks for 100 bucks. Results attached. Aborted test 25 minutes after test start at 200°.
